CUISINE
The cuisine is directly inspired by its surroundings, using local, organic and seasonal ingredients carefully selected and subtly enhanced with balanced external influences.
It reflects an authentic yet refined gastronomy, where northern Sweden blends Swedish and Sami traditions, combining local produce—reindeer, fish, berries, mushrooms—and preservation techniques linked to the Arctic climate.
Guided by the concept of “lagom”, based on balance and simplicity, this cuisine focuses on pure and natural flavours.
At the “Kallkällan” restaurant, this culinary identity comes to life and continues to evolve, deeply rooted in Sami culture and its know-how around reindeer and Arctic products.
The result is a sincere and harmonious cuisine, deeply connected to its land and shaped by the traditions of the North.
